Summer Veggie Rice Bowl

Ingredients:

For the Rice Bowl:

  • 1 cup jasmine rice
  • 2 cups water
  • Pinch of salt

For the Grilled Veggies:

  • 1 zucchini, sliced lengthwise
  • 1 yellow squash, sliced lengthwise
  • 1 red bell pepper, deseeded and quartered
  • 1 red onion, sliced into rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Avocado Lime Dressing:

  • 1 ripe avocado, peeled and pitted
  • Juice of 1 lime
  • 2 tablespoons Greek yogurt (or dairy-free alternative)
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • Water to adjust consistency

Optional Toppings:

  • Cherry tomatoes, halved
  • Fresh corn kernels (cooked)
  • Sliced radishes
  • Fresh cilantro leaves

Instructions:

1. Prepare the Rice:

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil over high heat.
  • Reduce the heat to low, cover, and let the rice simmer for about 15-18 minutes, or until the rice is tender and the water is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.

2. Grill the Veggies:

  • Preheat a grill or grill pan over medium-high heat.
  • In a bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with olive oil. Season with salt and pepper.
  • Grill the veggies for about 3-4 minutes per side, or until they have grill marks and are tender. Remove from the grill and set aside.

3. Prepare the Avocado Lime Dressing:

  • In a blender or food processor, combine the peeled avocado, lime juice, Greek yogurt, minced garlic, chopped cilantro, salt, and pepper.
  • Blend until smooth, adding water as needed to reach your desired dressing consistency. Adjust seasoning if necessary.

4. Assemble the Rice Bowl:

  • Divide the cooked jasmine rice among serving bowls.
  • Arrange the grilled veggies on top of the rice.

5. Drizzle with Avocado Lime Dressing:

  • Drizzle the prepared avocado lime dressing over the grilled veggies.

6. Add Toppings (Optional):

  • Sprinkle cherry tomato halves, cooked fresh corn kernels, sliced radishes, and fresh cilantro leaves on top for extra flavor and color.

7. Serve:

  • Serve the Summer Veggie Rice Bowls immediately while the veggies and rice are still warm, and the flavors are at their freshest.
